Ingredients

  • 1 cup 2 sticks unsalted butter, melted and cooled slightly
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 3 cups old-fashioned rolled oats

Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and well combined.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, salt, and cornstarch.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fold in the rolled oats until evenly distributed.
  • Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (or up to 3 days).
  • Scoop rounded tablespoons of dough (about 1.5 tablespoons each) onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers look slightly underdone.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

1. For extra chewy cookies, chill the dough for at least 1 hour.
2. To make these dairy-free, substitute the butter with a high-quality vegan butter stick.
3. Store baked cookies in an airtight container at room temperature for up to 5 days.
4. Freeze unbaked dough balls on a baking sheet, then transfer to a freezer bag.
5. Bake from frozen, adding 2-3 minutes to the bake time.
6. Add 1 cup of chocolate chips, chopped nuts, or dried fruit for a variation.
