  • 1 box 15.25 oz strawberry cake mix
  • 1/2 cup 1 stick unsalted butter, melted and cooled slightly
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup white chocolate chips or chopped white chocolate
  • Optional: 1/4 cup powdered sugar for rolling

Instructions

  • In a large bowl, whisk together cake mix, melted butter, egg, and vanilla until a soft dough forms. Stir in white chocolate chips if using.
  • Cover dough and refrigerate for at least 30 minutes (up to 3 days).
  • Preheat oven to 350°F. Line baking sheets with parchment paper.
  • Scoop dough into 1.5-tablespoon balls. If desired, roll each ball in powdered sugar.
  • Place 2 inches apart on prepared sheets. Flatten slightly with your hand.
  • Bake for 9-11 minutes, until edges are set and centers are still soft.
  • Cool on pan for 5 minutes, then transfer to wire rack to cool completely.
  • Store in airtight container at room temperature for up to 5 days.

Notes

1. For a thicker cookie, chill dough for 1 hour minimum.
2. Use a cookie scoop for uniform size.
3. If using a different cake mix flavor, add 1/2 cup freeze-dried strawberry powder.
4. To freeze baked cookies, wrap individually and freeze for up to 3 months.
5. Dairy-free: use vegan butter and a dairy-free cake mix. Egg-free: use a flax egg.
