Ingredients

  • 1 cup 2 sticks / 226g unsalted butter, softened
  • 1 cup 200g packed dark brown sugar
  • 3 large eggs room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 2 cups 250g all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 ½ cups 225g mixed dried fruit (golden raisins, currants, chopped dried apricots)
  • ½ cup 60g chopped walnuts or almonds (optional)
  • ¼ cup 60ml dark rum or orange juice (for soaking fruit)

Instructions

  • Soak the dried fruit in the rum or orange juice overnight (or at least 8 hours). Drain any excess liquid before using.
  • Preheat your oven to 325°F (160°C). Grease a 9-inch round cake pan and line the bottom and sides with parchment paper, leaving a 2-inch overhang.
  • In a large bowl, cream the softened butter and brown sugar together until light and fluffy, about 3 minutes.
  • Beat in the eggs one at a time, then add the vanilla and almond extracts. Mix until smooth.
  • In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
  • Fold in the soaked dried fruit and nuts (if using) gently until evenly distributed.
  • Pour the batter into the prepared pan and smooth the top. Bake for 1 hour 45 minutes to 2 hours, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
  • Let the cake cool in the pan for 15 minutes, then lift it out using the parchment paper and transfer to a wire rack to cool completely.
  • Once cool, wrap tightly in plastic wrap and then foil. Store at room temperature for at least 2 days before serving for best flavor. Feed with a tablespoon of rum or brandy weekly if aging longer.

Notes

1. Soaking the fruit is essential – it plumps the fruit and adds moisture.
2. If you’re short on time, microwave the fruit with the liquid for 30 seconds and let it sit for 30 minutes.
3. For a non-alcoholic version, use orange juice or apple cider instead of rum.
4. You can also use a strong brewed coffee for a deeper flavor.
5. Storing: Keep the cake wrapped at room temperature for up to 2 weeks.
6. For longer storage, freeze for up to 3 months.
7. Thaw at room temperature.
8. Feeding the cake: If you want a mature flavor, brush the cake with 1 tablespoon of rum or brandy every 7–10 days.
9. Re-wrap tightly after each feeding.
10. Substitutions: Swap the mixed dried fruit for any combination of dates, figs, dried cherries, or cranberries.
11. The nuts are optional – omit or replace with extra dried fruit.
12. Gluten-free option: Use a 1:1 gluten-free all-purpose flour blend with xanthan gum.
13. Add 1 tablespoon of cornstarch to improve tenderness.
14. The texture will be slightly more delicate.
15. Room temperature ingredients are crucial.
16. Cold butter and eggs won’t cream properly, and you’ll end up with a dense, heavy cake.
17. Let everything sit out for at least 30 minutes before you start.
18. Another trick: line your pan with parchment paper that rises above the rim – it makes lifting the cake out a breeze.
19. And don’t forget to wrap the outside of the pan with a strip of folded newspaper or a baking belt.
20. This stops the edges from over-baking while the center stays moist.
