Ingredients

  • 4 large eggs separated
  • 1 cup 200g granulated sugar
  • 1/2 cup 113g unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 3/4 cup 100g all-purpose flour
  • 2 cups 480ml whole milk, lukewarm
  • 1/4 teaspoon salt
  • Powdered sugar for dusting optional

Instructions

  • Preheat your oven to 325°F (160°C). Grease an 8-inch square baking dish and line it with parchment paper.
  • In a large bowl, beat the egg whites with a pinch of salt until stiff peaks form. Set aside.
  • In another bowl, beat the egg yolks and sugar together until thick and pale, about 2 minutes.
  • Add the melted butter and vanilla extract to the yolk mixture and beat until combined.
  • Sift the flour over the yolk mixture and fold in gently. Then slowly pour in the lukewarm milk while stirring. The batter will be very thin.
  • Gently fold the beaten egg whites into the batter in three additions. Don't worry if a few white streaks remain — they'll disappear during baking.
  • Pour the batter into the prepared pan. Place the pan inside a larger baking dish and fill the outer dish with hot water until it reaches halfway up the sides of the cake pan.
  • Bake for 40–45 minutes, until the top is golden and the center jiggles slightly when shaken. The edges should be firm.
  • Remove from the water bath and let the cake cool completely in the pan. Refrigerate for at least 3 hours or overnight before slicing. This helps the custard set.
  • Dust with powdered sugar before serving. Slice cleanly with a sharp knife, wiping the blade between cuts.

Notes

1. For a gluten-free version, use a 1:1 gluten-free flour blend that contains xanthan gum.
2. The texture will be slightly more tender.
3. If you don't have a water bath, you can place a small pan of hot water on the oven rack below the cake.
4. The steam will help prevent cracking.
5. Storage: Keep leftovers in the fridge, covered, for up to 4 days.
6. Freeze slices wrapped in plastic and foil for up to 2 months.
7. Make-ahead: Bake the cake a day ahead and refrigerate; it's even easier to slice cold.
8. Flavor variations: Add 1 tablespoon of lemon zest or 2 tablespoons of cocoa powder (reduce flour by same amount) for a twist.
