Ingredients

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1 cup powdered sugar sifted
  • 1 tsp vanilla extract
  • 1 cup heavy cream cold
  • Pinch of salt

Instructions

  • In a large bowl, beat the cream cheese and butter together until smooth and creamy, about 2 minutes.
  • Add the sifted powdered sugar, vanilla extract, and salt. Beat on low speed until combined, then increase to medium and beat for 1 minute.
  • In a separate cold bowl, whip the heavy cream until soft peaks form (about 2-3 minutes). Be careful not to overbeat.
  • Gently fold the whipped cream into the cream cheese mixture using a rubber spatula. Fold until just combined – no streaks left.
  • Use immediately, or refrigerate in an airtight container for up to 5 days. If refrigerated, bring to room temperature and stir before using.

Notes

1. For a chocolate version, replace 2 tbsp of powdered sugar with unsweetened cocoa powder.
2. For a dairy-free version, use vegan butter, dairy-free cream cheese, and chilled coconut cream (solid part only).
3. Store in the fridge for up to 5 days or freeze for 3 months.
4. If the filling becomes too thin after mixing, chill for 15 minutes and re-whip briefly.
5. Always start with a cold bowl and cold cream for whipping.
6. It whips up faster and holds its shape better.
7. I keep my mixing bowl in the freezer for 10 minutes before I start – game changer.
8. Don’t overbeat the cream cheese mixture.
9. Beat just until smooth, then fold in the whipped cream.
10. Overmixing deflates the air and makes it runny.
11. Trust me, I’ve turned a glorious filling into soup more times than I’d like to admit.
