Ingredients

  • 1/2 cup 1 stick unsalted butter, melted and slightly cooled
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  • Melt the butter in a microwave-safe bowl and let it cool for about 5 minutes. You want it warm, not hot.
  • In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and no lumps remain.
  • Add the egg and vanilla extract. Whisk vigorously until the mixture is pale and slightly thickened, about 30 seconds.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Pour the dry ingredients into the wet mixture. Fold together with a rubber spatula just until no streaks of flour remain. Do not overmix.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This step is essential for the texture.
  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Scoop rounded tablespoons of dough (about 1.5 tablespoons each) and place them 2 inches apart on the prepared baking sheet.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers still look slightly soft and puffy.
  • Let the cookies cool on the baking sheet for 5 minutes. They will continue to set. Then transfer to a wire rack to cool completely.

Notes

1. Chilling is not optional: The 30-minute chill prevents spreading and develops flavor.
2. You can chill up to 48 hours for even better results.
3. Butter substitute: For dairy-free, use a vegan butter block. Do not use tub margarine.
4. Storage: Store in an airtight container at room temperature for up to 4 days. Add a slice of bread to keep them soft.
5. Freezing: Freeze dough balls on a sheet pan, then transfer to a freezer bag.
6. Bake from frozen, adding 1-2 minutes to the bake time.
7. Flour measurement: Always spoon flour into your measuring cup and level it off.
8. Scooping directly packs the flour and leads to dry cookies.
