Ingredients

  • 2 tablespoons unsalted butter melted
  • 2 tablespoons brown sugar packed
  • 1 tablespoon granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk any kind
  • 1/4 cup all-purpose flour 30g
  • 1/8 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons chocolate chips plus more for topping

Instructions

  • In a microwave-safe mug (at least 12 oz), add the melted butter, brown sugar, and granulated sugar. Stir until well combined.
  • Add the egg yolk and vanilla extract. Stir until smooth and glossy.
  • Add the milk and stir to combine.
  • Add the flour, baking powder, and salt. Stir gently with a fork or small whisk until just combined. Do not overmix.
  • Fold in the chocolate chips. Sprinkle a few extra chips on top for looks.
  • Microwave on high power for 40 to 60 seconds. Start checking at 40 seconds. The cookie should look puffy and slightly underdone in the center.
  • Let it cool in the mug for 1 to 2 minutes. The cookie will set as it cools. Enjoy directly from the mug.

Notes

1. Microwave wattages vary.
2. If yours is 1000 watts or higher, start with 40 seconds.
3. Lower wattages may need the full 60 seconds.
4. For a gooey center, undercook slightly. For a firmer cookie, add 5 to 10 seconds.
5. Do not use a mug smaller than 12 ounces to prevent overflow.
6. Substitute the egg yolk with 1 tablespoon of water mixed with 1 tablespoon of ground flaxseed for a vegan version.
7. Store leftover dry mix in a sealed jar at room temperature for up to 2 weeks.
