Ingredients

  • 2 tablespoons unsalted butter melted
  • 2 tablespoons granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons all-purpose flour
  • 1/8 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon milk any kind
  • 2 tablespoons chocolate chips or chopped chocolate

Instructions

  • In a 12-ounce microwave-safe mug, stir together the melted butter and sugar until smooth.
  • Add the egg yolk and vanilla extract, and mix until well combined.
  • Sprinkle the flour, baking powder, and salt over the wet ingredients. Stir until just combined — do not overmix.
  • Pour in the milk and stir gently until the batter is smooth.
  • Fold in the chocolate chips.
  • Microwave on high for 60 seconds. Check the cookie — the top should look set but still slightly soft. If needed, microwave in 10-second bursts until done.
  • Let the mug cool for 1 minute before eating. Enjoy straight from the mug or scoop into a bowl.

Notes

1. For a vegan version, use a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water) and plant-based butter and milk.
2. For a gluten-free version, substitute with a 1:1 gluten-free baking blend and add an extra tablespoon of milk.
3. Microwave wattages vary.
4. If your cookie is dry, reduce the cooking time next time.
5. If it’s undercooked, add 10-second bursts.
6. Store any leftover dry mix (flour, sugar, salt, baking powder) in a sealed container for up to 1 month.
