Ingredients

  • 1 box 15.25 oz yellow cake mix (or any flavor)
  • 1/3 cup 75g unsalted butter, melted (or vegetable oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup 90g chocolate chips (optional)

Instructions

  • In a large bowl, combine the cake mix, melted butter, eggs, and vanilla extract. Stir until a soft dough forms. Fold in chocolate chips if using.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 24 hours). This prevents spreading and creates a chewy texture.
  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  • Scoop rounded tablespoons of dough (about 1.5 tablespoons each) and place them 2 inches apart on the prepared baking sheets.
  • Bake for 9-11 minutes, until the edges are set and lightly golden but the centers still look slightly underdone.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

1. For chewier cookies: Always use melted butter instead of oil, and chill the dough for at least 30 minutes.
2. Substitutions: Use a gluten-free cake mix for gluten-free cookies.
3. For dairy-free, use vegan butter or coconut oil.
4. For egg-free, use 2 flax eggs.
5. Storage: Keep in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 3 months.
6. Flavor variations: Try lemon cake mix with white chocolate chips, chocolate cake mix with peanut butter chips, or spice cake mix with dried cranberries and pecans.
